Grapes: From Paraje Altamira (1,100 m.s.n.m – calcareous soils), Vistaflores (1,300 m.s.n.m – calcareous soils) and Perdriel – Luján de Cuyo (950 m.s.n.m – silty loam soils). Vineyards: Yield less than 5 Tn per Ha. Harvest: Carried out by hand in 17 Kg plastic boxes. Selection: Double manual selection of clusters and berries. Maceration: For 12 days at 8°C. Alcoholic Fermentation: Carried out with indigenous yeasts for 10-12 days in first-use French oak barrels, medium toast. Malolactic fermentation: In French oak barrels. Ageing: In first-use French oak barrels for 10-12 months. ANALYTICAL DATA: Alcohol: 14.5% PH: 3.7 Total acidity: 5.70 g/l. TASTING NOTES: This wine at sight has a dark violet color, with black reflections. On the nose, it offers an elegant combination of ripe plums, blackberries and violets with hints of black pepper, intermingled with aromas of chocolate and vanilla. On the palate it is concentrated and rich, with aromas of red and black fruit, fresh acidity and excellent structure and length.
