WINEMAKING DATA
Grapes were gently pressed to barrel for fermentation and aged for seven months using 20% new French oak puncheons and 80% older French oak puncheons from coopers Damy and Ermitage. The lees were stirred only as needed during and after fermentation resulting in a lightly oak influenced and texturally nuanced wine.
WINEMAKER NOTES
The 2021 Sauvignon Blanc emanates sweet floral orange blossom, white peach, and citrus peel aromatics. A wine of precision, purity and freshness with balanced acid structure, a light mineral character and a luscious lemon cream palate with hints of Bosc pear and Pink Lady apple.
VINTAGE NOTES
The 2021 vintage is marked as having exceptionally high quality for both red and white varietals. The 2021 Sauvignon Blanc bud break and bloom were similar to the 2020 season, both taking place slightly later than the five-year average. Veraison and harvest were within a few days of our five-year average with no heat spikes during the growing season. The long, mild growing season allowed for exceptional flavors and bright acidity to be captured at harvest.
